Onion nuggets
Although I am using onion in this if you prefer you can use chopped raw prawns, minced raw chicken, or grated raw potato.

1 large onion
4 tablespoons flour
½ teaspoon salt
¼ teaspoon pepper
1 teaspoon mixed herbs
Oil for deep-frying
Heat oil for frying. Finely dice onion, and mix with rest of ingredients
Using two spoons make into rough ball shapes, and drop into hot oil. Fry until golden


Boiled Rice
Use approximately 100g long grain rice per person
Put large saucepans filled with water on to boil add tablespoon salt. When water is boiling add rice. Cook until tender. Drain into colander shaking off excess water turn out onto dish and serve


Fried rice
Boil rice as above when cool cover and place in refrigerator until needed
2 tablespoons oil
1 teaspoon salt

Put oil into wok or large frying pan. When oil is very hot add cold rice, and salt. Stir-fry for three minutes. If wanted Ham, peas, and egg can be added to make special fried rice. If adding ham etc add another four minutes to cooking time
If adding egg slightly beat egg and pour over rice while stirring


Chinese prawn crackers
Prawn crackers are sold dry in Chinese grocery stores and they are not expensive.
To cook you will need a pan of oil for deep-frying. When the oil is hot drop a few dried crackers in they only take seconds to cook. Be careful not to put to many in the pan at once as they really fluff up, and a few goes a long way


Stir fried noodles with bean shoots
250g dried egg noodles cooked for 4 minutes in pan boiling water
200g fresh bean shoots
1 small onion diced
1 teaspoon garlic puree
½ teaspoon ginger
2 tablespoons soy sauce
2 table spoons oil

Put bean shoot into colander, and when noodles are cooked drain over bean shoots
Let drain. Put wok onto high heat and add oil. When hot add onion stir frying until translucent. Add bean shoots, noodles, and rest of ingredients stir fry for 2-3 minutes.
